Fundraising Dinner to Support Puerto Rico After Hurricane Damage
By the time we were finalizing reservations for our Oaxaca earthquake recovery dinner earlier this month, we had already decided we’d need to do a fundraiser for Puerto Rico, too. The devastation there has been heartbreaking and the support slow in coming. Three weeks after landfall, much of the island is still without power and most people are just trying to survive day to day.
We often do a Cuban dinner since Pablo is Cuban and his two sons who work for us are half-Cuban and half-Mexican. Caribbean island foods are part of his DNA and his culinary first love. We’re excited to make this food for you and be able to help those in need during this terrible tragedy for American citizens often forgotten.
Please, come enjoy a traditional Puerto Rican meal and help a good cause. We will be donating to the Hispanic Federation’s “Unidos” fund for Puerto Rico. The dinner will be four courses for only $35, including:
- Asopao: rice and pigeon pea gumbo with chicken
- Escabeche de Gandules: tangy pigeon pea salad served with crab and avocado
- Lechon con Mofongo: roast pork with garlic-mashed plantains and pork cracklings
- Tembleque: coconut and cinnamon pudding
