A Mexican Christmas Dinner

Sunday, December 20th, we’ll have our 4th annual chile en nogada Christmas dinner. Chiles en nogada are one of the classics of 19th century Mexican convent cooking, combining elements from ancient Mexican, Spanish, North African, and French traditions.  In Mexico, it’s used to celebrate Independence Day, displaying all three colors of the Mexican flag.  But in the United States, pomegranates are a winter food and the red, green, and white are Christmas colors. Here’s the menu:

Butternut Squash Soup
with squash blossom cream and candied chipotle

Oaxacan Tamales
filled with carrots, raisins, and apples in mole negro wrapped in plantain leaves and topped with mole negro

Chile en Nogada
roasted poblano chile stuffed with mixture of pork (or butternut squash for vegetarians), nuts, candied fruit, pickled chiles, and olives topped with walnut cream sauce and pomegranate seeds

Budin de Pan con Rompope
bread pudding with Mexican rum-raisin crème anglaise
